Abstract

Radikal bebas dapat dihambat oleh antioksidan, yakni zat yang dapat memperlambat dan mencegah terjadinya oksidasi molekul. Antioksidan pada teh juga terbukti dapat meningkatkan kapasitas antioksidan total dalam tubuh. Tidak hanya teh yang terbuat dari rebusan daun teh, di Indonesia juga banyak teh yang terbuat dari rebusan berbagai jenis tanaman diantaranya bunga telang (Clitoria ternatea L.), daun teh hijau (Camellia sinensis L. Kuntze), dan daun mint (Mentha piperita L.). Tujuan dari penelitian ini adalah untuk mengetahui proporsi dari air rebusan teh kombinasi bunga telang, daun teh hijau, dan daun mint memiliki kemampuan peredaman radikal bebas DPPH dan memiliki kemampuan peredaman radikal bebas terbaik. Penelitian ini diawali dengan pembuatan simplisia, uji kadar air, kadar sari larut air, dan kadar sari larut etanol. Lalu air rebusan dibuat dari teh kombinasi bunga telang, daun teh hijau, dan daun mint dengan 7 proporsi perbandingan. Selanjutnya air rebusan teh diencerkan menjadi 500 ppm dan ditetapkan % peredaman radikal bebas DPPH. Nilai % peredaman kemudian dianalisis statistik dengan Kolmogorov-Smirnov, Kruskal Wallis dan Mann Whitney. Hasil penelitian ini menunjukkan bahwa pada semua proporsi dari air rebusan teh kombinasi bunga telang, daun teh hijau, daun mint memiliki kemampuan peredaman radikal bebas DPPH. Proporsi air rebusan teh dari kombinasi bunga telang, daun teh hijau, dan daun mint yang memiliki kemampuan peredaman radikal bebas DPPH yang tinggi adalah daun mint tunggal; kombinasi bunga telang, daun teh hijau, dan daun mint (1,5:1,0:0,5); dan kombinasi bunga telang, daun teh hijau, dan daun mint (1,0:1,0:1,0) pada konsentrasi air rebusan 500 ppm. Free radicals can be inhibited by antioxidants, which are substances that can slow down and prevent the oxidation of molecules. Antioxidants in tea have also been proven to increase the total antioxidant capacity in the body. In Indonesia, not only tea made from tea leaves is consumed, but also various herbal teas made from different plants, including butterfly pea flower (Clitoria ternatea L.), green tea leaves (Camellia sinensis L. Kuntze), and mint leaves (Mentha piperita L.). The aim of this study was to determine the composition of brewed tea made from a combination of butterfly pea flower, green tea leaves, and mint leaves that possesses DPPH free radical scavenging ability and to identify the combination with the best free radical scavenging activity. This research began with the preparation of simplicia, followed by testing for moisture content, water-soluble extract content, and ethanol-soluble extract content. Then, decoctions were prepared from a tea combination of butterfly pea flower, green tea leaves, and mint leaves in seven different composition ratios. The tea infusions were then diluted to a concentration of 500 ppm, and the percentage of DPPH free radical scavenging was determined. The percentage inhibition values were then statistically analyzed using the Kolmogorov-Smirnov, Kruskal-Wallis, and Mann-Whitney tests. The results of this study showed that all combinations of the tea infusion made from butterfly pea flower, green tea leaves, and mint leaves had DPPH free radical scavenging ability. The combinations with the best DPPH free radical scavenging ability at a 500 ppm concentration were: mint leaves alone; a combination of butterfly pea flower, green tea leaves, and mint leaves in a (1,5:1,0:0,5) ratio; and a combination of butterfly pea flower, green tea leaves, and mint leaves in a (1,0:1,0:1,0) ratio.
